Meatball Minestrone
2 tablespoons Olive Oil,
1 cup Diced Onion
1/2 cup Diced Carrots
3/4 cup Diced Celery
2 Garlic Cloves (minced)
1 1/2 cups Shredded Cabbage
1 medium Zucchini (sliced)
6 cups low-sodium Beef Broth
1 tablespoon Italian Seasoning mix
1/4 teaspoon Black Pepper
Salt (to taste)
One 28oz can Diced Tomatoes (undrained)
One 6oz can Tomato Paste
2 cups prepared Meatballs
One 15oz can Cannellini or Great Northern Beans (drained)
One 14oz can Italian Green Beans (drained)
1/2 cup Small Shell Pasta (optional)
In large saucepan, over Medium-low heat, saute onion, garlic, carrots, celery and zucchini in olive oil until onions are soft and transparent.Add cabbage, broth, seasonings, tomatoes, tomato paste and meatballs. Allow to simmer over medium-low heat until vegetables are tender. Add Cannellini beans, green beans and pasta. Cook until pasta is tender.
Serve with shredded Parmesan cheese sprinkled on top.

Thai Chicken
Sauce
½ cup low-fat chicken broth
¼ cup reduced-fat (all natural, no sugar added) peanut butter
2 tbsp each chopped, fresh cilantro and chopped, fresh basil leaves
1 tbsp sugar (sugar substitute)
2 tsp each grated gingerroot and lemon zest
1 tsp each sesame oil and cornstarch
1 clove garlic, minced
½ tsp each ground cumin and crushed red pepper flakes
Main
12 oz uncooked fettuccine
4 boneless, skinless chicken breast halves, cut into strips
1 large red pepper, cut into thin strips
2 cups snow peas, cut in half diagonally
1 large carrot, cut into thin strips
Combine sauce ingredients in blender until smooth. Cook pasta, drain and keep warm. Spray pan with non-stick spray. Cook chicken until no longer pink. Add vegetables, cook until tender, about three minutes. Add sauce, stir well to combine. Cook until thick and bubbly. Remove from heat. Toss pasta in pan. Serve.

After getting toxic mega colon and having my colon removed I wondered if I'd ever be able to lift heavy weights again. Less than 8 months after my last surgery I am able to deadlift 675. I hope others with colitis facing surgery can find inspiration in this. Lift done in Oct. 2007

1lb boneless, skinless chicken thighs (quartered)
4 slices turkey bacon (chopped)
15oz can great northern beans (drained)
1 onion (diced)
2 cloves garlic (minced)
14oz can diced tomatoes
1/4 cup chicken broth
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
dash of cayenne pepper
salt and black pepper (to taste)
In a large skillet over medium hear cook turkey bacon in olive oil until it begins to brown. Add onion and garlic and cook 3-5 minutes, stirring occasionally, until onions turn lightly golden brown. Add chicken and cook 5 minutes, browning on all sides. Stir in tomatoes, broth, thyme, basil, oregano, cayenne salt and pepper. Bring to boil, stirring occasionally; cover and simmer 10 minutes. Stir in beans and simmer, uncovered 10 more minutes, until mixture is slightly thickened and chicken is very tender.

1 lb 97% fat free ground beef
1 med onion, chopped
1 can kidney beans (dark or light)
1 can chili beans
1 can Rotel tomatoes (Mexican style tomatoes with green chilies)
1 can diced tomatoes
1 tbs cumin
1 tbs chili powder
1 tsp red chili pepper flakes (optional to taste)
Salt and pepper to taste
Brown ground beef, add onions and cook until soft. You made need to add a little olive or Canola oil to cook the onion as the lean beef with leave little, if any grease. Add tomatoes and scrape the bottom of the pan. Add rest of the ingredients. Bring to boil, reduce heat to low for 30+ minutes.

Taco Soup
1 pound ground beef or turkey
1 medium onion, chopped
1 16oz can chili beans, undrained
1 15oz can kidney beans, undrained
1 15oz can whole kernel corn
1 can tomato soup, undiluted
2 cups water
2 14.5oz cans peeled and diced tomatoes
1 4.5oz can diced green chiles
1 small can sliced olives
1 1.25oz envelope taco seasoning
2 t. chili powder
In large saucepan/stock pot saute beef or turkey and onions over medium heat until browned. Drain. Return to pan and add remaining ingredients. Let simmer uncovered for 2-3 hours, stirring occasionally.
Optional: Serve with shredded cheese and sour cream.
